Today I spent another creative day in the kitchen. With two little ones it’s hard to know what they will like from one day to the next. There are, however, two things I know for sure about their eating habits. They like rice and pasta! What I love about breakfast is that I can always use left overs from the previous night and whip up something cool the following morning.
Last night we had some left over rice and onions so I decided to make some fried rice with Chinese Sausage in our handy dandy wok. It’s quick and easy to make and the kids seemed to like it. I cooked the onions in the scramble eggs because Justice doesn’t like anything in his rice that taste foreign lol. I can tell he’s going to be a meat and potatoes man when he grows up.
With fried rice you could get as creative as you want. Heck, if I didn’t have Chinese Sausage I’d use Spam or maybe some left over chicken or beef.
Here’s what I came up with. Hope you like it.
